Hi Jessika
The international Mountain Biking Association (IMBA) produces some good
trail building resources that its members have access to. You might have
some members with mtb trail building expertise in town that it would be God
to reach out to ahead of time.

Depending on slope and drainage, you can either use large natural features
(logs, rocks) to guide traffic around the erosion, or use rock armoring to
get the riding surface above the roots and give soil something to bond to.
